Accidental Chocolate Ice Cream.
This is what I love about life, you just NEVER know what you might stumble across, ESPECIALLY when you accidentally discover a super healthy recipe for CHOCOLATE ICE CREAM! Yes, my friends, I just said HEALTHY chocolate ice cream.
Here’s how this played out….
I’m leading a group cleanse and on day four, I was getting pretty bored with my smoothie recipes, so I decided to get creative. I wanted something really thick that I could eat with a spoon and I was tired of the taste of my vegan protein powder, so I thought I would assemble all of the protein, fat, and fiber that I need with real food. So…. upon sliding open the freezer drawer, I gazed down at the multiple bags of organic frozen cauliflower rice and thought: hmmm. Yes, I grabbed it, along with frozen cherries, cinnamon, sliced almonds, almond milk, and raw cacao powder. In the magic bullet it went! I figured that the cauliflower would add a thick and creamy consistency and take on the taste of everything else. BINGO! What I was NOT expecting, was that it would taste like chocolate ice cream! GENUIS!
So given that I never measure anything (makes for some interesting baked goods), I can’t give you the exact measurements, but this is what I estimate I put in the magic bullet:
1/2 c. frozen dark cherries
2/3 c. frozen cauliflower rice
1/8 c. sliced almonds
3/4 c. unsweetened almond milk
1 tbs raw cacao powder
1/2 tsp cinnamon
SLAM! On the magic bullet and my healthy chocolate ice cream was born!
So, now that I know about this 8th wonder of the world, I am going to be trying it again and adding a third of an avocado for additional creaminess. You can also put a few drops of maple syrup or honey, or even a drop of natural stevia if you want to sweeten it up.
Just in time for summer!
